1. Delicious coconut tofu cookies are delicious.

2. Irene made a super delicious vegan shepherd's pie, too. I didn't have any of the finished product yet, but it smelled really good and I tried a bit of the filling and the potatoes and both were awesome. The filling has (among other veggies) edamame in it. And the potatoes have coconut milk instead of butter. *_* She made it to take to Alexander tomorrow, but I think we might be making it this way from now on just for ourselves, too.

3. Karaoke party tomorrow! :D :D :D

Coconut milk in shepherd's pie! That sounds amazing. We have a couple shepherd's pie recipes we like but always interested in new tweaks. (Also, edamame in the filling!!!)

The filling has onions, mushrooms, carrots, tomatoes, and edamame. If I'd been making it, I probably would have added celery, corn, and peas, too, since we have all those in the house as well.

But yeah, the coconut milk is a great addition! I'm going to use it to make plain mashed potatoes, too. It really gives them a great flavor.

i love basically anything with coconut, so i think i'mma try that recipe out since i do have some leftover firm tofu around and i already have everything else.

also, i just learned that state of georgia's been cancelled and immediately thought of you because i was gonna start watching it 'cause of your recent post about it. :[

Aw, that's too bad! I kind of figured it might, because it hadn't yet been renewed and the ratings for it were pretty low, especially since Disney seemed to be hoping for another That's So Raven type hit.

You should still watch the 12 eps there are, though, since it's cute on its own and as a sitcom it's not like you'll be left with a cliffhanger or anything.

i made them with about half a can of coconut milk, a couple glugs of olive oil (just plain, not extra virgin), coarse salt and several grinds of pepper. they turned out *SO* yummy. you'll probably want to cut back a bit on the coconut milk there tho because i used that much to make them more spreadable for the pie topping.

HIGHLY recommended.
