So this morning I made this recipe and they turned out really good! This is my first time ever trying any sort of vegan baked goods and I admit I was doubtful that something made with tofu instead of butter could really taste as delicious, but wow. They really did! They're soft and chewy and just taste really, really good.

I made a couple changes to the recipe, so I'll repost my version here.

1/2 cup sweetened coconut flakes, packed (about 46g)
1 cup unbleached flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
8 ounces firm tofu, blended in a food processor until almost creamy
1 teaspoon vanilla extract
3-7 tablespoons water (I used 3; I think it depends on how moist the tofu is)

Preheat oven to 375 F. Process the coconut in a blender or food processor until it is coarsely ground.

Mix the coconut, flour, baking soda, salt, and sugar in a mixing bowl. Add the tofu and vanilla and begin to stir. Add water by the tablespoon until all the dry ingredients are incorporated and a heavy dough forms. Do not add too much water or over-stir.

Use a cookie scoop or tablespoon to drop rounded tablespoons of dough at least two inches apart on a baking sheet lined with silicone baking mat or parchment paper (I used foil and that worked fine, too). Flatten each cookie slightly with a fork. Sprinkle with more coconut. Bake for 10-16 minutes or until edges are golden and middles seem done. Remove from oven and allow to cool for 5 minutes before transferring each cookie to a wire rack.

since i'm about to do these cookies, lol, i gotta ask a quick question. i was looking around and i can't quite see if it was answered, but i figured i could ask you since you've made them already: do you use the tofu outta the package as is, or do you drain/press any of the water out of it?

Definitely dump out any water it's packed in. I didn't really press it much after that, just let it sit for a bit on some paper towels. The last time I made these, I didn't have to add any water at the end at all, which may be because of how little water I pressed out of the tofu in the first place.

I hope they turn out good!
